| Grandpa's Applesauce Raisin Cake |
2-1/2 C. Flour
1 Tsp. Baking Soda
1 Tsp. Cinammon
1/2 C. Margerine
1 Beaten Egg
1 C. Molasses
8 Oz. Applesauce
1/2 C. Raisins
3/4 C. Sifted Powdered Sugar
4 Tsp. Lemon Juice
1/4 Tsp. Salt
In a medium bowl, combine flour, cinammon, baking soda, and salt. Cut in the butter so that the mixture resembles course crumbs. In a small bowl, stir together the eggs, molasses, and applesauce. Blend in the flour mixture until moistened. Stir in the raisins. Put in a 9x9x2 square baking pan.
Bake at 350 degrees for 40-45 minutes. Combine lemon juice and powdered
sugar. Spread over warm cake.
